My Cousin's Wedding.
In September Dad, Mom and I went to my cousin, Marie's wedding.
The wedding had a fall theme, from the flower girl scattering leaves as she walked down the isle, to the orange and brown colors of the bridesmaids dresses and decorations, and the Caramel Apple favors at the reception..etc. =) (Yes, I love seeing how people decorate their weddings/receptions. :) The Caramel Apples were really yummy!!
The Bride and Groom.
Reception:
The wedding cake. The slices we had were Pumpkin Carrot Cake. Something I really appreciated was that the bride and groom cut the cake soon after they arrived at the reception, and then the cake was cut up and used to serve the guests. From a cake decorators view this made a lot more sense than most of the weddings I've been to lately ... =)
My cousin Wes and his son Maximus. =)
| The centerpieces were so beautiful and each table had a different kind of candle/decoration. |

Recipe for: Gluten and Sugar-free Zucchini Muffins
This fall I tried making gluten free and sometimes sugar free recipes. This is one I came up with...it is very good and it's so nice to know that it's healthy! Enjoy!
Gluten –free and Sugar-free Zucchini Muffins
1 cup honey
1 cup oil
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 cup sorghum flour
2 cups millet flour
½ cup potato starch
2 to 3 teaspoons xanthium gum
2 ½ cup shredded zucchini
½ cup chopped walnuts, optional
Grease 2 - one dozen muffin pans.
Mix the honey, oil, eggs and vanilla in a mixing bowl. In a separate bowl stir all the dry ingredients together. Add to the honey mixture, alternating with the shredded zucchini. Spoon the batter evenly between the prepared muffin cups. Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Let cool slightly and remove from pans.

Recipe for Peanut Butter Pie
Decadent Peanut Butter Pie
Crust:
1 -1/4 cups chocolate cookie crumbs (20 cookies) I used Oreo cookies, and 20 cookies gives about 2 cups of crumbs…so use less of them if you want to use Oreos.
¼ cup sugar
¼ cup butter, melted
Combine ingredients, press into a 9-inch pie plate. Bake at 375 for 10 minutes. COOL
Filling:
1 cup creamy peanut butter
8 oz. cream cheese (at room temperature)
½ cup sugar
12 oz. container non-dairy whipped topping, divided
1 11.75oz jar Smucker’s Hot Fudge Ice Cream Topping, divided
In a medium bowl, beat together the peanut butter, cream cheese, and sugar. Gently fold in 3 cups whipped topping. Spoon mixture into pie shell. Using a spatula, smooth mixture to edges of pie.
Reserving 2 T. of the hot fudge sauce, place remaining hot fudge sauce in a pan and melt over low heat. Stir. Spread over the pie to cover the peanut butter layer. Refrigerate until serving time.
Just before serving, spread remaining whipped topping over the hot fudge layer, being careful not to mix the two layers.
Drizzle:
2 T. hot fudge topping
2 T. Peanut Butter
Place the 2 T. hot fudge sauce in a small baggie and knead for a few seconds. Cut a very small hole in the corner of the bag and drizzle over pie. Do the same with the 2 T. peanut butter, going in the opposite direction of the hot fudge.

Delight!
Mom asked us girls to make an acrostic of the word 'DELIGHT' with words we thought describe it best....
On the way to a baby shower I wrote mine down...
Dutiful
Elegant
Loving
Loving
Inspiring
Generous and gentle
Hospitable and happy
Thoughtful
"She looks for wool and flax and works with her hands in delight."

My Birthday...
In August I celebrated my one and only golden birthday.. .*sniff, sniff*. ;) My sisters made the most amazingly yummy meal! This year I chose: Mexican Lasagna (very good), Fruit Salad, and Creamy Lime Coolers! Dessert was the most amazing Peanut Butter Pie!!

| Yummy!! =) |
In the evening we watched You Can't Take It With You! I love that film. Something about it reminds me of my Grandpa K. : )
A week after my birthday we spent part of a day with some friends of ours. :) Here's a pictures of us sitting by the river near the Coffee Shop where we had lunch! We ate on the deck of the coffee shop. I think I had an Italian Sandwich and it was really good. :)
